The Vulcan VP18-1M3PN is a mobile heated holding and proofing cabinet designed for efficiency and versatility in food service environments. This non-insulated cabinet accommodates up to (18) 18" x 26" x 1" sheet pans or (36) 12" x 20" x 2-1/2" steam table pans, making it ideal for various baking and cooking needs.
Equipped with a fan and air tunnel, it ensures even heat distribution for optimal proofing and holding. The cabinet features (10) pairs of adjustable tray slides set at 3" on center, allowing for customizable storage configurations. A 1/2 gallon water pan is included to maintain humidity levels during proofing.
The temperature can be easily adjusted with a switch that allows for proofing or heated holding up to 190°F. The glass door provides visibility while the stainless steel construction ensures durability and easy cleaning. Additional features include a drip trough and removable drip pan for hassle-free maintenance.
Mobility is enhanced with 5" casters, including 2 swivel and 2 rigid with locks for stability. Operating on 120v/50/60/1-ph with a power output of 2.0kW, it comes with a cord featuring a NEMA 5-30P plug, meeting cULus and UL EPH standards for safety and performance.
